My name is Federico Fuser: I am a pastry chef, engineer, and alpine ski instructor. I live in the area between San Martino di Castrozza and Treviso (Italy), where my panettone workshop is also located. In making panettone, I use the highest quality ingredients, free from preservatives or chemical compounds. Thanks to the technique I developed for making panettone, and especially the addition of natural yeast (Pasta Madre Viva), the dough's flavor and texture are balanced and light.

Transformations
The processing times are dictated by the yeast, which, at the right temperatures, develops its full potential, resulting in an excellent traditional product without any assistance. It's truly "handmade": each panettone passes through my hands five times, each undergoing a different processing step.

I carry out charitable activities for orphans, disabled children, and children from disadvantaged families.

Classic Panettone
The king in its flavor! Candied orange peel and raisins are the classic italian flavor, the true origin of this recipe. The scent of vanilla, the honey and the citrus paste give a unique sensitive background!
Ingredients:
Soft wheat flour (GLUTEN), butter (MILK), candied orange peels 12% (orange peels, glucose-fructose syrup, sugar), raisins 11%, egg yolks (EGGS), water, sugar, sourdough yeast 5% (wheat flour, water) (WHEAT), honey, citrus paste 2% (sugar, orange, mandarin, lemon), salt, malt, vanilla in berry.
The product may contain traces of:
Gluten (wheat), milk derivatives, eggs. May contains soy and shell-fruit.

Chocolate Panettone
The most gluttonous! The flavor that perhaps appeals best to children, but not only. Highly fragrant milk and dark chocolate with an enveloping flavor, vanilla, and a hint of citrus make it irresistible!
